Maple Grilled Tempeh

Shopping List: 8 oz. tempeh, soy sauce, maple syrup, rice vinegar, fresh garlic, powdered chipotle

Can add mushrooms, peas, caramelized onions

Can serve with brown rice or quinoa


Armenian Apricot Soup

Shopping List: extra-virgin olive oil, two onions, three carrots, cumin, three cups red lentils, 12 oz. dried apricots

Can add fresh cilantro, fresh basil, arugula

Can serve with crusty bread, fresh salad greens


Shaved Fennel Salad

Shopping List: one zucchini, two fennel bulbs, fresh dill, fresh lemon juice, extra-virgin olive oil, sea salt, arugula, half-cup pine nuts, third-cup feta cheese (optional)

Can substitute crumbled tofu for feta

Can serve with favorite fruit smoothie


Roasted Delicata Squash Salad 

Shopping List: half-pound fingerling potatoes, three-fourths pound delicata squash, extra-virgin olive oil, white miso, harissa paste, fresh lemon juice, one bunch fresh kale, four small radishes, 1 1/2 oz. nuts

Can serve with cannellini beans, steamed spinach


Lemon Cucumber Tofu Salad

Shopping List: two lemon cucumbers, fresh dill, extra-virgin olive oil, fresh lemon juice, sea salt, 8 oz. extra-firm tofu, one-fourth cup pine nuts, one-half large avocado

Can serve with cooked rice, quinoa, mung beans
